Taco Soup Harrah Style

I have seen several recipes for Taco Soup, but I have always made our family Taco Soup this way , and we LOVE it, we could eat it once a week!

Taco Soup
1 lb hamburger, cooked with chopped fresh onions and drained (or leave out for vegetarian meal which is what I do)
1 to 2 cups water
1 can Kidney Beans
1 can Black Beans
1 can White Northern Beans
(can add a can of pinto beans as well!)
2 cans diced tomatoes
2 cans tomato sauce
1 can tomato soup
1 can Corn (or I sometimes use 2 cans)
1/2 cup chopped green pepper (or red pepper) (optional I usually dont add it)
1 envelope Taco Seasoning (I like Taco Bell) ( I use 1/2 pkg)
Shredded Cheese
Fritos Corn Chips
Sour Cream

Put all together in big pot on stove  (Except cheese, chips, and sour cream) and bring to boil and then turn down med to low to simmer for a little while, anywhere from 15 min to 60 min, whatever mood you are in!  You can add more or less of what you want, like more beans or more tomato sauce stuff or more water, I use 1/2 to 3/4 package of taco seasoning so it is not too spicy, but many use the whole packet.  Whatever you prefer.  Once cooked, we pour into bowls and top with fritos, sourcream and cheese.
I do not use red meat much anymore, so we just leave that out and you have a great tasting vegetarian meal!
Enjoy!

For the nourishing of our souls:
One of my favorite books I have read is called "Divine Signatures " by Gerald Lund and he shares many stories demonstrating how aware our Heavenly Father is of us and how much He loves us.
Here is one quote from the book from James E Faust at a time when he was going through his own challenges with his personal health:
"We encounter many bumps, bends, and forks in the road of life that leads to the eternities.  There is so much teaching and correction as we travel on that road. . .   President Brigham Young offered the profound insight that at least some of our suffering has a purpose when he said:  "All intelligent beings who are crowned with crowns of glory, immortality, and eternal lives must pass through every ordeal appointed for intelligent beings to pass through, to gain their glory and exaltation. . . .Every trial and experience you have passed through is necessary for your salvation"
