Hashbrown Bacon Pie

This is from gooseberry patch cookbook, I want to try it

Hashbrown Bacon Pie

5 eggs
1/2 cup milk
3 cups frozen shredded hashbrowns, thawed (or use your own homemade from baked potatoes you shred)
1/3 cup green onion, thinly sliced
1/2 tsp salt
1 1/2 cup shredded sharp cheddar cheese, divided
4 slices bacon, crisply cooked, crumbled, divided

Blend together eggs and milk, stir in hashbrowns, onion, and salt.  Add one cup cheese and half of the bacon.  Pour into a greased 9 " pie plate.  Bake at 350 for 25 to 30 min, until center is set.  Sprinkle with  remaining bacon and cheese; bake an additional 5 minutes.  cut into wedges.  Serves 6.

Quick as a Wink Waffles

This recipe is from Gooseberry Patch cookbook  I want to try it

Quick as a Wink Waffles

2 eggs
3/4 cup milk
2 Tblsp oil
1 cup all purpose flour
1 1/2 tsp baking powder
1 1/2 tsp sugar
1/2 tsp salt

Beat eggs until frothy in a medium bowl.  Add remaining ingredients; mix until smooth..  Pour by 1/2 cupfuls onto preheated waffle iron; serves 4.

Sweet Coconut Toast

This is from Gooseberry Patch cookbook, I have not tried it yet, but want to, will let you know what I think!

Sweet Coconut Toast

1 cup sweetened flaked coconut
1 cup sugar
1/2 cup butter, softened
1 egg, beaten
1 tsp vanilla extract
11 slices white bread

Combine all ingredients except bread; mix well.  Spread mixture on bread; arrange slices on an ungreased baking sheet.  Bake at 350 degrees for 15 to 20 min, or until lightly golden.  Serves 11.

Gingerbread Pancakes

This is a recipe I want to try, It was in a gooseberry patch cookbook, once I make them I will post if I liked them and if I did anything different, but for now it will go into the category I want to try!

Gingerbread Pancakes
2 1/2 cups Biscuit baking mix
3/4 cup apple butter
1 cup milk
2 eggs, beaten
2 Tblsp oil
1/4 tsp cinnamon
1/4 tsp ground ginger
1/4 tsp nutmeg
2 to 3 Tblsp butter

Stir together all ingredients except butter until blended; set aside.  Melt butter on a griddle or skillet over med heat.  Pour batter onto griddle by 1/4 cupfuls; cook until edges done.  Serve 6 to 8 

Farm Style Green Beans

Here is a good way to cook green beans:

Farm-Style Green Beans

3 slices bacon, chopped
1/4 cup onion, chopped
15 oz can green beans
1 cube chicken bouillon, crumbled

Cook bacon in medium saucepan over medium heat.  Add onion: cook for five minutes, or until onion is tender.  Stir in green beans and bouillon. Bring to a boil; reduce heat and simmer for 15 min.  Serves 4.

Can be doubled!
