Coconut Bread

This recipe is one that I make every Christmas to give as gifts, I like to make it in those mini aluminum bread loaf pans and you can put it on a big plate and then layer cookies or chocolates or other treats around it.  It is very yummy and very addicting, and a christmas tradition! You can bake it as a Bundt Cake or as bread

1 cup oil
4 eggs
2 tsp Coconut Extract Flavoring
2 cups sugar
1 cup buttermilk
3 cups flour
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1 cup coconut
1 cup chopped nuts (optional)

Glaze:
1 cup sugar
1/2 cup water
2 Tblsp butter or margarine
1 tsp Coconut Extract Flavoring

Mix together 1 cup oil, 4 eggs, 2 tsp Coconut Flavoring and 2 cups sugar.  Add 1 cup buttermilk.  Mix togteher and then add to mixture:  3 cups flour, 1/2 tsp salt, baking soda and baking powder.  Add 1 cup coconut and 1 cup nuts if you want nuts. 
Bake at 325 degrees for 45 to 55 minutes
Can bake in Bundt Cake Pan or 2 regular bread loaf pans or 6 mini loaf pans (I havent measured my batter to those numbers recently so I am not positive those numbers are right)
After the bread comes out of the oven, Glaze the bread and  let stand in pan several hours for the glaze to sink it.

To make Glaze:  In saucepan, stir togther sugar, water, and butter, boil for 1 to 2 minutes.  Remove from heat and add 1 tsp Coconut Extract.  Pour over warm bread (Can poke holes in bread with a meat fork to get more glaze in bread, or you can just pour it over the loaf and it will sink in)  I usually start making the glaze during the last five minutes of the baking time of the bread.

These are rich and sweet and yummy and divine!

For the nourishing of our souls: Today at church in RS Shelli C taught a wonderful lesson on the small and simple things that become the big things.  But her question was, how do you teach your children to know who they are?
In Psalms 82:6 it says : "I have said, Ye are gods; and all of you are children of the most High"
and in Moses 1:13 (Pearl of Great Price) it says :And it came to pass that Moses looked upon Satan and said:  Who art thou? For behold, I am a son of God, in the similitude of his Only Begotten: and where is thy glory, that I should worship thee?

If we can teach our Children who they are, they will act accordingly! and so will we.
