Martha Stewart's Banana Bread

I found this at www.thesisterscafe.com and it is one of my favorite recipes for banana bread, cant go wrong if it comes from Martha!

1/2 cup butter (1 stick) softened
1 cup sugar
2 large eggs
1 1/2 cups flour
1 tsp baking soda
1 tsp salt
1 cup very ripe bananas, mashed (about 3)
1/2 cup sour cream
1 tsp vanilla extract
1/2 cup chopped pecans or walnuts (optional)

Preheat oven to 350 degrees.  Butter or spray with Pam a 9 x 5 x 3 inch loaf pan; set aside.  With an electric mixer, cream butter and sugar until light and fluffy.  Add eggs and beat to incorporate.  In a medium bowl, whisk together flour, baking soda and salt.  Add to butter mixture and mix until just combined.  Add mashed bananas, sour cream and vanilla; mix to combine.  Stir in nuts if desired and pour into pan.  Bake until cake tester inserted into center of loaf comes out clean, about one hour.  Let rest in pan for 10 minutes, then turn out onto a rack to cool.
(do not over bake, set timer at 55 minutes and go from there)

yeah for banana bread!  You will enjoy this moist yummy bread!

It is so easy to get distracted and start putting other things first, such as shopping, cooking, sleeping, friend, TV Shows, the internet and so forth, and then when the day is done we have no time left or no energy left to do the important things such as reading scriptures, pondering, praying , hugging and reading to our children.  If we put our Heavenly Father and our Savior first, all else will fall into place and be taken care of, or at least we will have the strength to deal with whatever our challenges are!
