Like My Mom's Good Macaroni Salad

This is a good Macaroni Salad to make when you are asked to bring a pasta salad, it reminds me most of my mom's.  I added 2 tblsp balsamic vinegar and left out the ham and peas.

Like My Mom's Good Macaroni Salad
1 pkg. (1 lb)  macaroni (or shells)
1 1/2 cup mayonnaise
2 Tblsp mustard
1/4 cup sour cream
2 Tblsp apple cider vinegar
2 Tblsp sugar
1/2 tsp kosher salt (or to taste)
ground black pepper to taste
1 cup ham, cut into small cubes
1 cup cheddar cheese, cut into small cubes
2/3 cup frozen peas, thawed
2- 3 carrots, shredded
(I added 2 Tblsp balsamic vinegar as well, maybe cut the apple cider one to 1 1/2 Tblsp and do balsamic to 1 1/2 Tblsp for less vinegar)

Optional mix ins to the salad include:
cucumber, peeled and diced
dill pickles, chopped
tomato, diced
red bell pepper, diced
celery, chopped

Prepare macaroni to al dente according to package directions.  After macaroni is cooked, drain and rinse in cold water.  Once macaroni has cooled down, drain well.

In medium sized mixing bowl, combine the mayonnaise, mustard, sour cream, apple cider vinegar, sugar, salt and pepper.

In large bowl toss macaroni with ham, cheese, peas, carrots, and other mix ins.
Fold in mayonnaise mixture until pasta is well coated
Cover with plastic wrap and allow to sit overnight
If the salad seems a little dry after setting up overnight, add some more milk and or mayonnaise a little bit a a time until salad becomes nice and creamy again.

I just made this for our Easter pic nic and it is so so so yummy!
