Ali's Lemon Poppy Seed Cake

I love this blog and cookbook and website, I bought some of her cookbooks and she is really talented and kind, I met her at Swiss Days and she gave me an extra book just because I ordered one online, she will be at Swiss Days again this year, go see her! I needed a fancy cake for a RS activity, so I made this, and here is her website and recipe:

Ali's Lemon Poppy Seed Cake

4 cups cake flour, sifted
2 tsp baking powder
1  1/2 tsp baking soda
1 tsp salt
1 cup butter, softened
1 1/2 cups sugar
2 tsp vanilla
1 1/2 tsp almond extract
4 large eggs, room temp
2 cups buttermilk
3 Tblsp poppy seeds

In a medium bowl combine flour, baking powder, baking soda, and salt.  Set aside.  In a large bowl cream butter and sugar.  Add eggs, vanilla and almond extract and cream until fluffy.  Add buttermillk and mix.  Slowly add in dry ingredients while mixing.  Lastly fold in poppy seeds.  Pour into two 9 inch greased round cake pans.  Bake at 350 deg for 30 to 35 min or until toothpick comes out clean.  While cake is baking make lemon filling and lemon cream cheese frosting.

Lemon Glaze Filling:
1/4 cup butter
2 lemons, juice and zest
1 cup sugar
Combine butter, juice, zest and sugar in a small saucepan.  Cook on low until sugar is dissolved.

Lemon Cream Cheese Frosting
8 oz cream cheese, softened
1/2 cup butter, softened
3 Tblsp fresh lemon juice
2 - 2 1/2 cups powdered sugar

Let cake cook in pan for 15 min.  Invert and cool on rack for another 15 min.  Place first cake onto cake platter.  Poke holes in cake with fork and pour half the glaze on top letting it soak into the cake.  Spread a layer of cream cheese frosting and then place the second cake on top.  Poke holes again and pour on the remainder of the lemon glaze.  Frost the top of cake with lemon cream cheese frosting, letting some drip down the sides, serve.
Option, can serve with fresh raspberries.
