Chicken Enchilada Soup

Jenna loves to eat soup at Zupa, the chicken tortilla one, we keep searching for a recipe like that one, so far we have come up with this and like it, we have added things from diff recipes that we found
Chicken Enchilada Soup


2 to 3 chicken breasts, cooked and diced into cubes
1/2 pgk taco seasoning mix
1 can 15 oz black beans, rinsed and drained
1 can 14.5 oz diced tomatoes
1 pkg frozen corn or can use canned corn

1 can 10 oz mild red enchilada sauce
3 cups chicken broth or stock
2 cans campbells nacho cheese soup
1 1/2 cups milk or canned milk (whatever you have)
1/2 cup chopped onion
1 cup sharp cheddar cheese

there were two different ways to cook this, one on stove, one with crockpot, I will give you both ways

Bring chicken stock to boil, then add nacho cheese soup, corn, milk, taco seasoning, beans, tomatoes  enchilada sauce and onion. Bring to gentle rolling boil, mix in chicken.  Let simmer for about 25 to 35 min, Remove from heat and add cheese, allow cheese to melt and SERVE

For crockpot:  Combine drained beans, tomatoes, corn, onion, and peppers (it had called for diced green chili or chopped bell pepper but I left that part out so just skip the peppers) Place the 2 or 3 chicken breasts on top of mixture.  IN large bowl whisk together the enchilada sauce, soups and chicken broth and milk whisk together until smooth, pour sauce mixture over ingredients in cooker.  Cover and cook on low heat 6 to 8 hours or high 3 to 4 hours.  Remove chicken and cut into pieces, put chicken back onto soup.  Top with cheese.  Soup can be topped with avocado, sour cream or crushed tortilla chips.

Nourishing our souls:
The most important thing we can do is build a personal relationship with our Savior and brother Jesus Christ.  We need to spend time each day getting to know Him better by reading about him, reading scriptures, praying, and thinking about Him.  The most important thing we can do is REMEMBER HIM, after all, we are His disciples! If you want to get to know someone better, read up on their lives, talk to them, think about them!
