LIon House Ranch Chicken

Here is another recipe from my friend Dana Day, Can't go wrong with this recipe! So Yummy!


Lion House Ranch Chicken

3/4 cup cornflakes, crushed

3/4 grated parmesan cheese

1 package Ranch Salad Dressing Mix (The dry packet)

8 boneless skinless Chicken Breast halves

1/2 cup butter melted


In a shallow Bowl, combine the cornflakes, parmesan cheese, and 

salad dressing mix. Dip chicken in melted butter, then roll in

   cornflake mixture to coat. (We just bought the regular size

chicken breast and I trimmed it and cut them in half.  There is still

 plenty to eat and when cooking for a mass crowd it goes a lot 

further.)


Place chicken breast in a greased 9x13 inch baking dish. Bake,

 Uncovered, at 350 degrees for 45 minutes or until juices run clear.

I read a book from the library called "An hour to live, and hour to Love", by Richard Carlson and Kristine Carlson, it is a very good book and I highly recommend it to all, here is one thing he shares that he would do differently:

"If I could live my life over again, Kris, I'd spend far less energy wanting things I didn't have, and far more energy enjoying what I already did have.  It's such an obvious thing, and it's right under our noses our entire lifetime - the idea that happiness comes not from getting what we want, but instead from wanting what we have."

Lion House Cheese Cake and Strawberry Cake

Here is another recipe from my friend Dana Day, she puts together great meals, this is good to serve on holidays for big group and special occasions! Below is version for one cake and using strawberries instead of cherry pie filling

Lion House Cheesecake for a Crowd
(So good, so beautiful, and it tastes like a million bucks and is SO EASY to make)
1 pkg. white cake mix
2  (8 oz) pkgs cream cheese softened
4 cups powdered sugar
1 pint whipping cream, whipped
3 16 oz cans cherry topping filling

Preheat oven to 350 degrees.  Grease Jelly Roll Pan. Prepare cake according to directions on package.  Pour the batter into a jelly roll pan.  Bake for 15 min or until cake test done.  This is creating a thin sheet cake.  Remove from oven and cool.  Whip cream cheese and powdered sugar together until fluffy.  Add whipped cream.  Spread mixture onto both of the cooled cakes.  Spread pie filling on top of cream cheese layer.  Refrigerate til ready to serve.  Makes 24 to 30 servings

This can be done another way as well, I have a recipe from Sandridge Ward Cookbook by Barbra Thurgood and hers was like this:

1/2 white cake mix (2 cups powder)
2/3 cup water
1 Tblsp flour
1 egg
Bake in 9 x 13 pan 15 min at 350

8 oz cream cheese
1 cup powdered sugar
Cream together and fold in 1/2 pint whipping cream (whipped already and sweetened slightly!)  Put on cooked cake

Cook 1 pkg strawberry Danish Dessert, add sliced strawberries to it and spread over cake. Let Set.





AU GRAUTIN POTATOES AND FUNERAL POTATOES

This is a recipe from my friend Dana Day, there are several versions, this one always gets compliments and is easy!

 FUNERAL POTATOES or au gratin potatoes 

Makes One   9 x 13  which can serve up to 12

6-8 large baked potatoes that are cooked and cooled, and then shredded (I always cook mine the night before, and put them in the fridge, then I just peel them cold from fridge and it works great)

OR if you dont have time to do that then buy :

1 large bag shredded hashbrowns  (2 lb bag)(in freezer aisle)

1 can cream of chicken soup (undiluted) (or cream of celery soup)
1/2 cup butter
2 cups grated mild cheddar cheese
1 pint sour cream
1 onion chopped very fine (can leave this out if you don't like onions)
1/2 to 1 cup crushed corn flakes (optional)

Heat soup, 1 cup of cheese, butter, and onions.  When heated through, add sour cream.  Mix together with shredded potatoes and put into 9 x 13 pan.  Sprinkle remaining cheese on top  (you can add crushed cornflakes if you like them ) 
Bake at 350 degrees for 45 min or until bubbly.  You can use generous amounts of cheese with this, this is easy to double or triple as well.

Orange Creamsicle Cookies

I found this on www.the-girl-who-ate-everything.com and they are yummy, everyone that has eaten them said they loved them, enjoy!

Orange Creamsicle Cookies
2 1/2 cups all purpose flour
3/4 tsp baking soda
1/2 tsp salt
1 cup (sticks) butter, softened
1/2 cup sugar
1/2 cup firmly packed brown sugar
1 large egg
1 tsp vanilla extract
2 Tblsp orange zest (for me that was the zest of 2 oranges)
2 cups white chocolate chips

Preheat oven to 375 degrees
In a small bowl, combine flour, baking soda, and salt; set aside.

In a large bowl, cream butter and sugars until light and creamy.  Beat in egg and vanilla until smooth.  Gradually add flour mixture until combined.  Stir in orange zest and white chocolate chips.

Drop by rounded teaspoonfuls onto ungreased cookie sheets.  Do not flatten cookies; it will make them dry.  Bake 8 to 10 min or until golden brown around edges.  Do not overcook!  Cookies will be plump.  Cool for several minutes on cookies sheets before transferring to rack to cool completely. Store in airtight container!

Today I want you to do one nice thing for someone else, it can be writing a letter and mailing it, making a phone call, sending an email, baking a treat, offering to scratch someone's back or rub their feet, cleaning their bedroom or doing their laundry, telling them something you like about them, spending time doing something they like as in playing a game with them or reading them a book.  The list goes on, find one thing today and go outside your comfort zone and DO IT, it will make you happier inside, younger on the outside, prettier inside and out and take years off your life!  magical!

Chicken Enchilada Soup

Jenna loves to eat soup at Zupa, the chicken tortilla one, we keep searching for a recipe like that one, so far we have come up with this and like it, we have added things from diff recipes that we found
Chicken Enchilada Soup


2 to 3 chicken breasts, cooked and diced into cubes
1/2 pgk taco seasoning mix
1 can 15 oz black beans, rinsed and drained
1 can 14.5 oz diced tomatoes
1 pkg frozen corn or can use canned corn

1 can 10 oz mild red enchilada sauce
3 cups chicken broth or stock
2 cans campbells nacho cheese soup
1 1/2 cups milk or canned milk (whatever you have)
1/2 cup chopped onion
1 cup sharp cheddar cheese

there were two different ways to cook this, one on stove, one with crockpot, I will give you both ways

Bring chicken stock to boil, then add nacho cheese soup, corn, milk, taco seasoning, beans, tomatoes  enchilada sauce and onion. Bring to gentle rolling boil, mix in chicken.  Let simmer for about 25 to 35 min, Remove from heat and add cheese, allow cheese to melt and SERVE

For crockpot:  Combine drained beans, tomatoes, corn, onion, and peppers (it had called for diced green chili or chopped bell pepper but I left that part out so just skip the peppers) Place the 2 or 3 chicken breasts on top of mixture.  IN large bowl whisk together the enchilada sauce, soups and chicken broth and milk whisk together until smooth, pour sauce mixture over ingredients in cooker.  Cover and cook on low heat 6 to 8 hours or high 3 to 4 hours.  Remove chicken and cut into pieces, put chicken back onto soup.  Top with cheese.  Soup can be topped with avocado, sour cream or crushed tortilla chips.

The most important thing we can do is build a personal relationship with our Savior and brother Jesus Christ.  We need to spend time each day getting to know Him better by reading about him, reading scriptures, praying, and thinking about Him.  The most important thing we can do is REMEMBER HIM, after all, we are His disciples! If you want to get to know someone better, read up on their lives, talk to them, think about them!

Chip Beef Dip for Crackers

My friend Diane Worthen gave us a little thank you for helping at her daughter's wedding, she made this dip and put it in a cute container and gave us a "sleeve" of crackers, and I tell you, I couldn't stop eating this, it was so good,  she makes this a lot and says everyone loves it:

Chip Beef Dip for Crackers
2 8 oz pkgs of Cream Cheese
2 pkg. Carl Buddig Chipped Beef
1 bunch green onion
1 tsp Accent
1 Tblsp Worcestershire sauce
2 Tblsp milk

Chop the onion really well.  Chop Chipped beef well.  Blender works good.  Add all other ingredients and chill.  Better on the second day.

All I know is that I took it to work and we all ate and ate and ate it, it was so yummy!

Raspberry Butter

Yay for flavored butters for our homemade rolls.  As I come across the ones I like, I will post them!

Raspberry Butter from Melanie from Sisters Cafe
1 cup (2 sticks) butter at room temp
1/2 cup good raspberry jam (seeded)
1/4 cup powdered sugar (you could add more -depending on the sweetness of your jam and your taste)

Mix thoroughly and store in fridge.  Enjoy!

Thought for the day:
We watched a christmas movie from Netflix last night, and I cried through the whole movie, but it is based on a true story of a 3 year old with leukemia and they give him a Christmas on Halloween as they realized he was not going to live to Christmas, but the whole theme was to Cherish each Moment we have with our family, and to Make each Moment Count.  We should live each day as if it were our last or someone else's last.
