1 1/12 cups red or green grapes sliced in half
3 stalks celery diced
1/2 cup diced onion
1/2 cup veganaise or mayonnaise
1/2 cup cashews (optional)
3 garlic cloves, minced
1 1/2 tsp Organic no salt seasoning

Healthy Chicken Salad from Elizabeth Grange

Healthy Chicken Salad Sauce

This was served at our women's retreat and was so delicious!

Chicken Salad Sauce

½ cup whole milk greek yogurt
½ cup mayo (my favorite is avocado oil based mayo)
Herbs of choice. I used fresh parsley, basil, lemon thyme, dill,
green onions. Sea salt and pepper.
Blend together into food processor until herbs are broken down
into small pieces. If you don’t want to use a food processor, finely
chop herbs and mix all ingredients into a bowl.

Mix into a bowl full of cooked diced chicken, diced apples,
diced celery, and halved grapes.

Turkey and Cranberry Sub Sandwich

I love turkey and cranberry sandwiches, especially the one at Kneaders.  I found this copy cat recipe for a Downtowner sandwich from chef in training at this site:  It sounds like the same sandwich I love so I am posting it here in my favorites!

Turkey and Cranberry Sandwich aka Downtowner Sandwich

Makes one sandwich

Ingredients:
1 6 inch sub sandwich loaf (sometimes you can buy bread from Subway or Nikki
says to buy it from Sam's-the 12 in loaf and cut that in half)
4 Tblsp softened cream cheese (can use the spreadable kind)
1/4 tsp dill
4 to 5 thin slices Turkey Breast
2 slices Swiss or Provolone Cheese
2 Tbsp cranberry sauce
1/2 avocado (sliced thinly)
1/2 cup shredded lettuce
Instructions:
Cut sub sandwich loaf in half length wise to create a top and bottom half of sandwich
Spread about 2 Tblsp of cream cheese on the inside of each sandwich half
Sprinkle the top of the cream cheese lightly with dill
Place turkey slices on bottom half of sandwich and place the two slices of cheese over the top of turkey
Place sandwich halves on microwave safe plate and microwave the sandwich halves for about 30 sec or until cheese begins to melt
Smear cranberry sauce over the top half of sandwich.  Place avocado slices over the top of the cranberry sauce.  next place shredded lettuce evenly over the top of the avocado
Place the two sandwich halves together and enjoy!

Favorite Chicken Salad

This recipe is from my friend Wendy Perkins, and whenever I need chicken salad, this is my recipe I use, Love it, so will you!

Chicken Salad
2 cups chicken, diced
2 cups celery, diced
2 eggs, hard-boiled and diced
1/4 cup green peppers, diced
1/4 cup grated carrots
2 Tblsp green onion, chopped
2 Tblsp sweet pickles, diced
1 cup mayonnaise
2 tsp. lemon juice
1/2 cup whipping cream (already whipped and ready to go, I buy the little carton of fresh whipping cream and whip it with powder sugar and vanilla and then use that)

Mix together all ingredients above except whipping cream.  Put in refrigerator for two hours.  Just before serving, add 1/2 cup  whipping cream.

You can add grapes to this salad and nuts as well!  So yummy in croissants, enjoy!

for the nourishing of our souls:
My favorite scripture is : Proverbs 3:5-6 Trust in the Lord with all thine heart; and lean not unto thine own understanding:  In all thy ways acknowledge him, and he shall direct thy paths.

the key words are "all thine heart" , sometimes we do trust and we do believe, but not with ALL our HEARTS, the secret to peace in all trials and all life's experiences comes from Trusting that our Heavenly Father knows up perfectly, loves us perfectly, and wants us to return to Him again, therefore, He will guide us through our journey and bless us, even when we think He does not hear or understand us, HE DOES!  TRUST WITH ALL YOUR HEART!
