Veggie Bread

So. . . .this is one of my most favorite things to eat, and I have never really had a recipe for this, just guessing how it was made.  Jenna went on a date and the father of her date made this as an appetizer for all of them, she came home and described it and this is what we came up with:

Veggie Bread!

1 loaf of french bread
butter and garlic powder for the bread
parmesan cheese
Mozzarella cheese
Zucchini, chopped
Onions, chopped
Red peppers, chopped
Mushrooms, diced
Tomatos, diced  (I dont always have tomatoes so leave out if you
wish, still yummy!)                           

In Saucepan saute up the chopped vegetables in some butter, I add some balsamic vinegar (maybe 2 Tblsp) and I squeeze a little honey over the top, so it makes a kind of glaze. Let it all simmer for just a bit. 

I butter the french bread and sprinkle on garlic powder and parmesan cheese and I broil the bread under the broiler just a bit until lightly browned.  Pull out of oven and spoon the vegetables on top of the bread, then sprinkle some mozzarella cheese over the top.  Put back in oven to broil, watch closely as it only needs a little bit of time to melt the cheese and finish lightly browning!

Pull out of oven and serve!  DELISH!

Taco Bell Dorito Tacos Nacho Style

So. . . .me and Lacey love the Taco Bell Dorito Taco, but of course they are not the best thing to eat, but we decided to make our own version, and we eat this like every other week!

1 lb ground turkey
About 3 Tblsp worcestershire sauce
About 3 Tblsp light sodium soy sauce
1/2 to full package of Taco Bell Taco seasoning mix
1 cup water
1 package Dorito Cool Ranch or Nacho Cheese Chips
Toppings such as sour cream, cheese, salsa, guacamole, olives.


I brown the turkey and then add the worcestershire, soy sauce, taco seasoning and water.  Once that is cooked down and through I turn the stove off.
Then on a plate place your dorito chips, covering your whole plate.
Then I sprinkle on some grated cheese and put it in the microwave for 15 to 20 seconds, you DO NOT want to overcook in the microwave as the cheese will become hard and not fun to eat, you actually want to catch it right before the cheese is all melted.
Then I top that plate with the taco meat and then add sour cream, olives, guacamole, salsa or chopped tomatoes, and whatever other toppings you like.

I have discovered I like the Cool Ranch flavor in this recipe more than the Nacho cheese one.

I have also turned this into a taco salad by placing spinach or romaine lettuce in bowl first, then I crush the chips on top of the salad, then sprinkle some cheese (I do not microwave) and add the meat and all the toppings, and it is just as yummy!

I have never tried to guesstimate the calories, I am sure if I knew I might not eat this very often, however, it is a dang yummy treat and a quick sunday meal when we come home from church! YUM

Peanut Butter Brownie Trifle

For mother's day, my children made wonderful tacos and desserts, yes I always ask for tacos on mother's day or my birthday cuz I just love them.  Megan decided to make a dessert and it was yummy so I shall include it in here:

Peanut Butter Brownie Trifle
Ingredients
  • 1 (19.5 oz) Pillsbury Milk Chocolate Brownie Mix
  • 2 (13 oz) packages Miniature Reese's Peanut Butter Cups
  • 4 c. 2% milk
  • 2 (5.1 oz) packages instant vanilla pudding mix
  • 1 c. creamy peanut butter
  • 4 tsp vanilla extract
  • 2 (8 oz) cartons Cool Whip, thawed

Instructions
  1. Prepare brownie mix according to package directions using a 9x13 in pan. Make sure not to over bake the brownies.
  2. Cool on a wire rack; cut into 3/4-in. pieces.
  3. Cut Reese's peanut butter cups in half; set aside 1/3 cup for garnish.
  4. In a large bowl, whisk milk and pudding mixes for 2 minutes. Add peanut butter and vanilla; mix well.Fold in 1-1/2 cartons whipped topping.
  5. Place a third of the brownies in a trifle bowl. Top with a third of the remaining peanut butter cups. Spoon a third of the pudding mixture over the top. Repeat layers twice. Cover with remaining whipped topping; garnish with reserved peanut butter cups.
  6. Refrigerate until chilled.
I did not have a trifle bowl, but we had those clear plastic cups that you drink out of, like 7 oz, with a wide opening.  We put the trifle in there and so it was individual servings and it turned out AWESOME!  yummy!

Healthy Sweet Potato Shepherd's Pie

Yes, you saw correctly sweet potato shepherd pie.  I know.  I thought that was weird too.  But then. . . . .I tried it and I fell in love with it.  I make it several times a month.  I got the recipe from here  from Shauna's friend Yvonne over at Tried and Tasty .  She has some wonderful recipes to try.  Really, do try this, you will like it!

Healthy Sweet Potato Shepherd's Pie

1 lb ground turkey
1/2 medium onion, diced
3 Tblsp worcestershire sauce (I added this to her recipe)
3 Tblsp light sodium soy sauce (I added this to her recipe)
1/2 pckg of taco seasoning mix (I added this to her recipe)
1 Tblsp olive oil
1 tsp salt
1 tsp oregano 
1 15 oz can of corn, drained  (I used a bag of frozen white corn)
1 14 oz can green beans, drained
1 15 oz can tomato sauce
2 cups sweet potatoes, cubed (about 3 med)
1/2 cup shredded cheese

Preheat oven to 350. In a medium pot, boil sweet potato cubes until soft; approx. 10-15 minutes (depending on the size of your cubes). While sweet potatoes are boiling, heat olive oil on medium-high in a large pan and saute onions until translucent; 3-5 minutes. Add ground turkey; brown and season with garlic salt, salt & oregano and soy sauce and Worcestershire sauce. Add corn, green beans and tomato sauce. Heat throughout. Once potatoes have softened, drain all water and mash with a potato masher, hand held immersion blender, or hand mixer. Spoon meat mixture into the bottom of a casserole dish and cover with prepared mashed potatoes. Sprinkle the pie with shredded cheese and bake for 10-15 minutes until cheese is melted.

(My two cents:  I like to bake the sweet potatoes and then I peel them and put them in bowl and use a mixer to make them like mashed potatoes.  You do not need to add anything to them, but I sometimes add a Tblsp of butter or so as I mix them up.)  They do take over an hour to bake, so I bake potatoes on Sundays and keep them in my fridge for the week)
Also:  I like to add 1/2 package of taco seasoning to the ground turkey, it adds so much yummy flavor to the meat.
